The flan has to be chilled for a couple hours. Then, the pan should be flipped over and flan extracted from the pan. This is so the melted sugar is on the top.
*I totally ate my flan-souffle as soon as it cooled, to make sure I wasn’t going to accidentally poison the judges. I’m thoughtful like that. And hungry.
